I have tried using the schedule option in the Windows GUI, but it doesn't actually seem to work? I can't find anything added in the Task Scheduler and there is no Service running.
When I run the GUI it has a count down time still, but how is it triggered?

When the scheduled time is reached, the GUI version runs the backup. It doesn't schedule anything in the Task Scheduler.
If you install Duplicacy for all users, you'll see an option to install it as a service, but then you'll need to run Duplicacy as administrator to edit the settings for the service, and then exit the GUI version for the service to run in the background.
